Today I am thankful it’s Faux Friday, as in I am off tomorrow! I am also thankful I made a batch of these delicious baked egg frittatas to get me through the week:
These frittatas are quite simple and can be made with basically any ingredients you like or have available. This batch had tomatoes, peppers, cheese, and eggs. Sometimes I add leftover asparagus. They are even great with bacon, ham, or sausage.
I bake a batch and then refrigerate them and reheat one or two through out the week. It’s a great time saver.
I bake them for about 10-15 minutes at 350 degrees.

Aren't these the things you made it into a magazine for making??? You so have to send me the actual instructions for making these so I can't start making some for my work week. For real, having a hard boiled egg for breakfast everyday gets soooooooo boring! See you TOMORROW!!!!!!! 🙂

I am thankful I have a job (period) that allows me to have holidays off (paid) and weekends to spend with my family 🙂

They are yummy, I put buttered bread in the muffin tin first (no crust) to make a shell. They are awesome, quick to make and taste great. Congrat's on being published for the recipe in Self Magazine!
