Today I am thankful it’s Faux Friday, as in I am off tomorrow! I am also thankful I made a batch of these delicious baked egg frittatas to get me through the week:
These frittatas are quite simple and can be made with basically any ingredients you like or have available. This batch had tomatoes, peppers, cheese, and eggs. Sometimes I add leftover asparagus. They are even great with bacon, ham, or sausage.
I bake a batch and then refrigerate them and reheat one or two through out the week. It’s a great time saver.
I bake them for about 10-15 minutes at 350 degrees.
You can go here, here, and here for more options. Or just run a search. There are tons of variations out there.
What are you thankful for today?
those look yummy. i might try that sometime. looks like a great grab-n-go breakfast option!
Aren't these the things you made it into a magazine for making??? You so have to send me the actual instructions for making these so I can't start making some for my work week. For real, having a hard boiled egg for breakfast everyday gets soooooooo boring! See you TOMORROW!!!!!!! 🙂
Morgan – Yes, they are! They got published in Self Magazine. I'll get you the recipe tomorrow.
Sound yummy! I will have to try this!
Love the Faux Friday! HA
Great idea! Going to have to try that!
Happy Faux Friday! 🙂
Wow, B.o.B! So I see from the pic that you ate 5 of them already this morning! Hmm? I say eat the remaining 7 before going to track. That's should be eventful. 😉
I am thankful I have a job (period) that allows me to have holidays off (paid) and weekends to spend with my family 🙂
I am TOTALLY doing this. I need more protein and it is so darn inconvenient to get! This will make me a happy (hopefully healthy) girl 🙂 thanks for sharing!
They are yummy, I put buttered bread in the muffin tin first (no crust) to make a shell. They are awesome, quick to make and taste great. Congrat's on being published for the recipe in Self Magazine!
Mmmm me likey some eggs and bacon….!
I am sooo thankful I get tomorrow off from work! woooo!
my kids love those mini-fritatas. we make them all the time.
Ooo YUM! I meant to buy eggs the other day too, darn it, I hate when I go to the grocery store without my list. :/
I'm thankful for My nieces & nephews that absolutely crack me up! I love being an Aunt!
They look so darn good– I am VERY hungry right now!
Thanks so much for you input on the marathon choices– You rock!
Yuuuuuuuuuuuuuuuum. They look great.
I'm grateful today for having the day off and spending it in leisure!
(and for the Michael Jackson music I'm speeding along Memory Highway to!)
Those look good!
Looks like my kind of fast, easy mini meal!
